My favorite way to cool off 🙆🏻 I blended a fresh mango with some frozen bananas and hot DANG this was delicious 💯 So thick + creamyy and it tasted like healthy candy 🍬 I topped it with some frozen papaya balls, pepitas, and coconut flakes for a little crunch (more added post photo). Buddha bowl dreaming ☁ Here’s an example of what my lunches/dinners look like most days. When I think of salads I think of bowls like this… roasted sweet potato, cauliflower, courgette, corn, quinoa, steamed greens, plenty of hummus and creamy cashew dressings. What do you think? It took me a while to warm up to this deck, but now I am learning so much from it.

Falafels Bowl by @happyskinkitchen 💜
2 cups of steamed or raw kale
1 cup of cooked edamame beans
A handful of sauerkraut
1 cup of sliced purple cabbage
Falafels or veggie patties of our choice
Sesame seeds to sprinkle on top
2 tbsp of tahini
The juice of ½ lemon
1 tbsp of tamari sauce
1 tsp of agave nectar
To make the dressing just mix all the ingredients into a small bowl using a whisk to avoid any lumps.
To assemble just place all the ingredients onto a bowl, drizzle the tahini dressing on top and sprinkle with the sesame seeds.
These vegan eggplant gyros are made with savory pan-fried strips of seasoned eggplant, wrapped up in warm pita bread with creamy dairy-free tzatziki.
